Most likely the same time as the plugins do.

We're waiting for stable versions (ie. not-beta) of all our plugins to work, and then we're going to have to make sure they work properly when they're updated on our server. I'd give it anywhere between a week and a month.

To make a backup of your current state of Minecraft (including its version and whatever mods you may have installed), head over to your .minecraft directory which, assuming you're using Windows 7, can be found in:
C:\Users\(Username)\AppData\Roaming\.minecraft
(If you can't find this, paste the above into your Windows Explorer directory bar, and replace the username with your own)
Assuming you don't have any funky mods installed that mess with the folder itself, it's safe to just copy the /bin folder and paste it somewhere else, like in a backups folder. This copied version of Minecraft will contain all the file information and such in your current state of Minecraft. If, for whatever reason, you want to revert your minecraft installation, name your current bin folder something else (or delete it) and move that copied /bin folder in the backups folder back out into the /.minecraft directory.

Unfortunately, in your particular case, you've already updated Minecraft to 1.4, which isn't compatible with our server's 1.3.2 version. Your old version of Minecraft has been completely wiped and there's not a particularly direct way of downgrading your version. You'll have to downgrade your current installation of Minecraft; you can find instructions for that [You must be registered and logged in to see this link.]. I haven't tested it myself, but I wish you the best of luck.

Actually, you only need to backup the Minecraft.jar file.

(Username) - AppData - Roaming - .minecraft - bin - minecraft.jar

If, for whatever reason, he has mods, there's a chance they'll have external files in the /bin folder like SSP Commands (I have WorldEdit.jar sitting in there, for example), then backing up the minecraft.jar alone will not make a complete backup. I mean, unless the Minecraft update process only wipes the .jar, in which case you'll have a weird, messy /bin folder.

On a completely related sidenote: We're only waiting on essentials to update now.

Updates usually only update minecraft.jar. In my folder, the only files other than Minecraft.jar that has been updated since August are mod and game settings and options, lastlogin, mcpatcher and the stats folder.

Edit: Appearently, 1.3.2 came out in August. Anyway! The updates doesn't update your mods for you. If you have a clean minecraft.jar, mods don't load and won't break your game. If you backup your .jar, you simply change the file name to something like minecraft132backup.jar, and you change it back to minecraft.jar if you accidentally update, replacing the updated 1.4.2 jar.

Another edit: This link will be useful for those who accidentally updated. Mojang's own download link for 1.3.2. Can't say this is against the rules now, can we? It's at their own website after all...

How do I keep it from auto-updating as soon as I log on?

It should ask you whether you want it or not. In which case you can either say 'Yes' or 'Not Now'
